Strawberries are a summer must in our home. They not only taste delicious but are a great source of Vitamin C and fiber. Gatsby loves to steal them when they’re drying on the counter! Arugula is also known to have cancer-fighting properties as it is in the cruciferous vegetable family (think broccoli and kale). I love this simple salad which can be served as a whole meal or a healthy BBQ side.

Strawberry Chicken Arugula Salad

Ingredients
  

  • 4 chicken breast boneless, skinless and halved
  • 4 strawberries sliced
  • 4 cups arugula
  • 1/4 cup raw walnuts chopped

Italian Vinaigrette Dressing

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black peper

Instructions
 

  • Combine the dressing ingredients in a small bowl and set aside. You may also mix in a high-speed blender.
  • Grill chicken breast for 3-5 minutes on each side, or until the internal temperature reaches 165 degrees. Let cool and cut into strips.
  • Combine the strawberries, walnuts and arugula in a bowl. Toss with desired amount of salad dressing.
  • Divide the salad into four servings and top with strips of chicken breast.

Notes

The salad works great with leftover chicken or store-bought rotisserie chicken for convenience.
