I think my favorite recipe (so far) on my Rockstar Doggy Momma blog is the turkey burgers because on a practical note they’re great to make for dinner then have for lunch the next day (or following day) with a salad. So good!

Ingredients
- 1 tablespoon olive oil
- 1 clove garlic - minced
- 1/4 cup white onion - diced
- 1/4 cup fresh parsley - minced
- 1 cup fresh spinach
- 1 lb ground turkey breast
- 1/4 cup basil pesto - store bought
- 1/4 cup sun dried tomatoes - diced
- - - salt and pepper - to taste
- 4 slices fresh mozzarella cheese - ball cut into 1 oz. slices
- 4 slices tomato slices - Roma or Heirloom
- 1 cup fresh arugula

Instructions
- Preheat indoor or outdoor grill.
- Heat olive oil in a medium sauce pan and sauté the garlic, onion and parsley, once the onions are translucent add in the spinach. Set aside to cool.
- In a large mixing bowl combine the turkey breast, pesto, sundried tomatoes and sautéed vegetables.
- Form into 4 patties and season with salt and pepper to taste.
- Grill the burgers until they are cooked through and melt the cheese on top.
- Top each burger with one tomato and ¼ cup of arugula.
Recipe Notes
Serve burgers on two green lettuce leafs or a whole grain English muffin with a Personalized Side Salad.
