Strawberries are a summer must in our home. They not only taste delicious but are a great source of Vitamin C and fiber. Gatsby loves to steal them when they’re drying on the counter! Arugula is also known to have cancer-fighting properties as it is in the cruciferous vegetable family (think broccoli and kale). I love this simple salad which can be served as a whole meal or a healthy BBQ side.

Instructions
  1. Combine the dressing ingredients in a small bowl and set aside. You may also mix in a high-speed blender.
  2. Grill chicken breast for 3-5 minutes on each side, or until the internal temperature reaches 165 degrees. Let cool and cut into strips.
  3. Combine the strawberries, walnuts and arugula in a bowl. Toss with desired amount of salad dressing.
  4. Divide the salad into four servings and top with strips of chicken breast.
Recipe Notes

The salad works great with leftover chicken or store-bought rotisserie chicken for convenience.
