I love to cook breakfast for my family on the weekend. These healthy “muffins” also make great treats for Gatsby and Daisy. This is a sweeter take on our Crustless Quiche Recipe thanks to some heart-healthy apples and cinnamon.
Apple Cinnamon Breakfast Muffins
Heat oven to 325 degrees.
In a medium sauce pan heat the apples with 1/4 cup water and 1 teaspoon cinnamon, until the apples become soft and taste like applesauce.
Combine the eggs, remaining cinnamon, coconut oil and coconut flour into a bowl and beat until combined. Add the cooled apples, but leave 1/4 cup for topping.
Line a 12 muffin tin with parchment paper muffin cups (See note #1 below). You can also grease the muffin tin with coconut oil.
Scoop 1/4 cup of the batter into each tin and top with the remaining apples.
Let cool and serve. Share one with your pup for a healthy protein packed treat! (See now #2 below)
1. Do not use regular muffin cups or the muffins will stick to them.
2. You can freeze the extras for a fast on the go breakfast or snack.
