Parmesan Oregano Potato Wedges

If you are craving French Fries, serve your burgers bun-less with Parmesan Oregano Potato Wedges.

Ingredients
  

  • 3 medium baking potatoes - peeled (preferably organic)
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon dried oregano
  • 1 teaspoon garlic granules
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 cup shredded parmesan cheese - divided
  • - - olive oil cooking spray

Instructions
 

  • Preheat oven to 400 degrees.
  • Cut each potato lengthwise into 8 wedges.
  • Combine lemon juice, olive oil, oregano, pepper, salt, garlic and ½ the parmesan in a large bowl.
  • Add potatoes and toss well to coat.
  • Place potatoes on a baking sheet that has been coated with cooking spray.
  • Bake potatoes for 20 minutes then flip to the other side and sprinkle with the remaining parmesan cheese. Bake for an additional 20 minutes or until potatoes are tender and lightly browned.
